One of my youngest son's favorite meals. He especially likes his mother's version; he could eat the whole thing himself if we would let him. Serve with some nice crusty rolls.
As my oldest son says, "Chowder is the king of soups.", and this one is his favorite. Very thick, rich and artery clogging, but the family loves it on a cold winter day. Very easy to make too.

Please note, this recipe is for a double size batch, because my family likes it so much. Just halve all the ingredients for a regular batch.
A recent one I tried for the family. They all voted it as a keeper. I did double the sauce from the original recipe, as we felt it was a bit dry on the egg noodles.
Very easy since you use frozen chicken breasts. And please, don't skip the last part, use KFC's slaw on these.... MMMM!

I found this little jewel in my PDA cookbook program. A quick search of the net shows it to be very popular. We used hot salsa and topped with sour cream. The whole family really enjoyed this and said they want it placed in regular rotation now. Think of it as kind of a Mexican Shepherds Pie.
