Cafe Served
Kelly's Chili Recipe
Who's Kelly? I have no idea, but I do know this is the best chili I have ever had, and I have tasted a lot of chili. I wasn't the only one to say it either the day it was served in the cafe. It takes a little longer to make, but it is worth it.
Ingredients
- 3 lbs hamburger
- 1 green pepper, diced
- 1 red pepper, diced
- 1 medium onion, diced
- 3â4 fresh jalapeños, chopped small
- salt and pepper, to taste
- garlic powder
- 5â6 tablespoons chili powder
- 1 3/4 cups ketchup (I like Huntâs)
- 3 TBS lime juice, can sub lemon jc. (I just use the concentrates)
- 4â6 TBS brown sugar
- 1 TBS Worcestershire sauce
- 2 teaspoons vinegar
- 1 1/2 teaspoons mustard
- 1 1/2 TBS cumin
- 3 cups spicy hot V8
- 1 (16 ounce) can dark red kidney beans, rinsed and drained
- 2 (8 oz) packages fresh sliced mushrooms, jarred will work â I skipped, Amy wonât eat them
- 1 (14.5 ounce) can Del Monte original stewed tomatoes, undrained, break up tomatoes
- 1 cup beef bouillon (optional)
Directions
- Brown the hamburger with a couple healthy shakes of garlic powder in a large pot over medium heat until no longer pink. Drain the grease.
- Add onion, green pepper, red pepper, and jalapeños. Mushrooms too if youâre using them. Cook until the onion is soft.
- Stir in V8, ketchup, beans, and the stewed tomatoes (broken up, juice and all). Add the seasonings â chili powder, brown sugar, cumin, Worcestershire, mustard, vinegar. Add more garlic powder and salt and pepper to taste. A splash of the bouillon if itâs looking too thick.
- Cover, simmer on low 1â2 hours, stirring when you walk by. Or my preferred method is to dump it in a crockpot and run low 4â6 hours.
- Lime or lemon juice right before you serve.
